Hello and welcome, I love to be in a kitchen creating. I am often asked for recipes. So I am going to add recipes as I think to. If you have a request let me know. I will try to add photo of each thing to accompany recipe. Will do my best. I do not aim for healthy, low fat, good for you in any way. Dreamsicle Fudge

This fudge is really yummy!  tastes like the dreamsicle ice cream pops.


3 cups Sugar
3/4 cup Margarine
2/3 cup evaporated milk
10 oz white chocolate chips
7 oz marshmallow creme
9 drops red food coloring  ***
12 drops yellow food coloring  ***
3 tsp orange extract******

Combine sugar milk and margarine in sauce pan. Bring to a boil.  Boil and stir for 3-5 minutes Remove from heat. add marshmallow creme and white chips. Stir until smooth. set aside one cup of mixture in a bowl.  In the sauce pan add food coloring and extract. mix well. pour into 9X13 inch pan. Drop the white mixture by spoonfuls onto fudge. Use a knife to make swirls throughout the fudge.


***  you can make any colors you wish to create

I have an addiction.

Taco Bake

1 pound ground beef
1 small onion, chopped
3/4 cup water
1 package (1-1/4  ounces) taco seasoning
1 can (15 ounces) tomato  sauce
1 package (8 ounces) shell macaroni, cooked and drained
1 can (4 ounces) chopped green chilies
2 cups (8 ounces)  shredded cheddar cheese, divided

In a skillet, brown ground beef and onion over medium heat: drain. Add water, taco seasoning and tomato sauce; mix well.  Bring to a boil; reduce heat and simmer for 20 minutes. Stir in macaroni, chilies and 1 1/2 cups of cheese. Pour into a greased  1 1/2 qt baking dish. Sprinkle with the remaining cheese. Bake at 350 F for 30 minuted or until heated through.  serves 6




DONUTS!

Who doesn't love  a good donut?








Baked Raised Donuts
1/3 cup milk
1 tablespoon sugar
1/2 teaspoon salt
3 tablespoon margarine
1/3 cup very warm water
1 pkg. yeast
1 egg, beaten
2 1/3 cup sifted flour
1 teaspoon lemon rind
1/4 teaspoon nutmeg
1/2 cup melted margarine
1/2 cup granulated sugar
2 teaspoon cinnamon

Scald milk. Stir in sugar, salt and oleo. Cool to lukewarm. Measure very warm water into large mixing bowl. Sprinkle yeast in water; stir until dissolved. Stir in lukewarm milk mixture, egg and 1/2 of flour. Beat until smooth. Stir in lemon rind, nutmeg and rest of flour to make soft dough. Turn dough on a lightly floured board and knead until smooth and elastic. Place dough in greased bowl, turning to grease top. Cover; let rise in warm place until double in bulk (45 minutes). Punch down. Turn out on floured board. Roll out 1/3-inch thick. Cut with floured donut cutter. Place donuts on greased baking sheet. Cover and let rise in warm place for 1/2 hour. Brush tops and sides with some of the melted oleo and bake at 375 degrees for about 15 minutes. Remove from oven and dip in remaining oleo, then in 1/2 cup sugar into which some cinnamon has been mixed. Serve warm. Makes 1-1/2 dozen.



Krispy Kreme Doughnuts
2 pkg yeast
1/4 cup warm water (105-115 degrees)
1-1/2 cup lukewarm milk (scalded then cooled)
1/2 cup sugar
1 teaspoon salt
2 eggs
1/3 cup shortening
5 cup all-purpose flour
Vegetable oil

Dissolve yeast in warm water in 2 1/2-quart bowl. Add milk, salt, eggs, shortening and 2 cups flour. Beat on low speed scraping bowl constantly, 30 seconds. Beat on medium speed scraping bowl occasionally, 2 minutes. Stir in remaining flour until smooth. Cover and let rise in warm place, until double, 50-60 minutes. (Dough is ready when indentation remains when touched.) Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes. Heat vegetable oil in deep fryer to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain. Dip the doughnuts into creamy glaze set on rack then when slightly cooled spread chocolate glaze on top. Can dip in sprinkles or other toppings after chocolate if desired.

Creamy Glaze:
1/3 cup butter 2 cups powdered sugar
1-1/2 teaspoons vanilla 4-6 tablespoons hot water

Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.

Chocolate glaze:
1/3 cup butter 2 cups powdered sugar
1-1/2 teaspoon vanilla 4-6 tablespoon hot water 4-oz milk chocolate or semi-sweet chips

Heat butter and chocolate over low heat until chocolate is melted; remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water 1 tablespoon at a time, until desired consistency.

Rolls are good!

Bread  machine  is  best  for these rolls,  we  love  them  with honey butter  or  to sop up gravy.
In bread machine place
1 cup Water
2 tbsp margarine
1 egg
3 1/4 cup bread flour
1/4 cup sugar
1 tsp salt
3 tsp Yeast

Set on dough cycle.  Shape into balls  or just drop on lined cookie sheet. Cover lightly  and let double.
Bake at 375 F about 12-15 minutes.

STIR that Fry

Chicken Stir-Fry

Cook  1 Pound boneless, skinless chicken breasts {cut into strips}
in 3/4 cup Miracle Whip salad dressing in large skillet on medium high heat 3 minutes.
Add 1 package  (16 oz) frozen mixed vegetables (thawed)
or 3 cups cut up fresh vegetables.
Stir in 2 tablespoons soy sauce and 1/2 teaspoon garlic powder. Continue cooking 5 minutes or until chicken is cooked through.   Serve over rice.

Enchiladas!!!

Beef  Enchiladas  what a great  family dinner

12 flour tortillas
1 1/2 pounds ground  chuck
1 can enchilada sauce
1 small can green chilies, chopped
grated yellow and white cheese
Cook  and crumble ground beef until done, drain fat, add can of chilies and 4 tablespoons enchilada sauce.  Put  a large  spoonful of meat mix into each tortilla. Add Cheese.  Roll tortilla.  Place in  sprayed 9X13 pan. Pour remaining enchilada sauce over top and  top with shredded cheese.  Bake at 375 F until Bubbly and light brown. Approximately 25-30 minutes

Beef it up!

Family Beef Noodle Casserole

1/2  of a 1 pound package of Egg Noodles uncooked
1 pound ground beef
1/2 cup chopped bell pepper
1/2 cup chopped  onion
2- 10 3/4 oz cans condensed cream of mushroom soup
1 - 10 oz package frozen peas and carrots
1 1/2 cups milk
8 oz sour cream
4 oz shredded  cheddar cheese.



Cook noodles as package directs;drain.   In Dutch Oven, over medium heat, brown beef; pour off fat.  Add red pepper, and onion; cook and stir until  tender. Stir in noodles and ten remaining  ingredients except cheese.Cook and stir until heated through; top wiht cheese. Serve immediately. Refrigerate leftovers.  for  extra  crunch  add water chestnuts.

Dessert the right way

Fudgy S'mores

1 box Duncan Hines Snack Express Kit- S'mores
2 sticks butter melted
1   8 oz package cream cheese, softened
1 box 3.8 oz devils food instant pudding

Crush graham and chocolate chip pieces until crumbs. Mix with melted butter. Press mixture into bottom of 9X13 inch baking pan to form crust.
Place marshmallow packet,  in microwave  just long enough to soften.  Blend well  with cream cheese and pudding.
Spread over graham crust.  Refrigerate until set, about 30 minutes.

Pumpkin Pie

Pumpkin Pie

1 1/4 cups pumpkin puree, canned or fresh
3/4 cup sugar
1/2 teaspoon salt
1/4 tsp ground ginger
1 tsp ground cinnamon
1 tsp all purpose flour
2 eggs, lightly beaten
1 cup evaporated milk
2 tbsp water
1/2 tsp vanilla extract
1  9 inch  unbaked pastry pie shell

Mix all  ingredients well. Pour into shell and bake at 400F for 15 minutes
Reduce heat to 350 F bake about 35 minutes longer or until center is set.

Brunch Casserole

1 pound  sausage  cooked, crumbled and drained
1  5 1/2  oz box of seasoned croutons
4 eggs
2 cups milk
1  10 1/2 oz can of cream of mushroom soup
1  16 oz package Italian style Frozen vegetables
1 cup cheddar shredded cheese
1 cup monterey jack shredded  cheese

Line the bottom of a 9X13 greased baking dish with croutons. Sprinkle cooked sausage over croutons.
Beat eggs and milk in large bowl.  Add remaining ingredients, mixing well with a spoon.  Pour over sausage.
Bake at 350 F  for 1 hour. This recipe can be made ahead and refrigerated overnight before baking. Serves 8

Ranch it up

Ranch Taco Chicken Salad

1 pound boneless, skinless chicken
1 Tbsp oil
1 Tbsp mexican seasoning
16 oz salad greens
8 oz salsa
8 oz fat free ranch dressing
1 cup shredded cheddar cheese
1/2 cup crushed baked tortilla chips

Cook chicken in oil and seasoning  in large nonstick skillet on medium high 8 minutes or until chicken is cooked through.
Toss greens, salsa, dressing, cheese and cooked chicken in large bowl.
Top with crushed chips just before serving.

Stuff this!

24 cherry tomatoes
1 1/2 pieces bacon cooked and crumbled
1/2 cup fine chopped green onion
1/2 cup mayo

combine last 3 ingredients. scoop out center of tomato.  Place upside down on paper towel.
30 minutes to drain.  fill and refrigerate.

Hearty Lasagna

Hearty Lasagna

3 cups Ricotta Cheese
3 Cups Shredded Mozzarella Cheese
2  Eggs
1 pound ground beef (cooked, crumbled and drained)
48 oz spaghetti sauce
12 cooked lasagna noodles
1/2 cup Parmesan cheese

Mix Ricotta, Mozzarella, and eggs.
In separate bowl mix meat and spaghetti sauce.
In grease baking dish layer as follows
 1 1/2 cup meat sauce
Noodles
and then 1/2 cup Cheese mix.
Repeat layers
last layer should be noodles and small amount to meat sauce
and parmesan cheese.  Bake at 400 for 30 minutes. Let stand 10 minutes.
Serves with salad and bread sticks.

Breakfast Bunt

Breakfast BundtCook this versatile breakfast delight and eat for days! Not just for breakfast or brunch, it can also be paired with soup for lunch or dinner.





INGREDIENTS
2 tubes of refrigerated buttermilk biscuits
1/2 pkg. of turkey sausage (cooked and crumbled)
ANY MEAT YOU LIKE!
1/2 pkg. turkey bacon (cooked and diced)
1 cup reduced fat cheddar cheese (grated)
1 1/2 cups of liquid egg product, or whole eggs equivalent
1/2 medium  onion diced  optional

1/2 green pepper  diced  optional




INSTRUCTIONS


  1. Preheat oven 375°F.
  2. Spray a bundt pan with cooking spray and set aside.
  3. Start your first layer by placing the biscuits in the pan. Next, sprinkle the cooked sausage and bacon over the biscuits.
  4. Pour the eggs over the meat and then sprinkle the cheese over the eggs.
  5. Add the second layer of biscuits over the cheese.
  6. Bake for 40 minutes. Cool and invert on to a plate to serve.
Tip: Any kind of breakfast meat can be used, such as chorizo, Italian sausage, spicy pork sausage, Canadian bacon, etc. Feel free to switch up the type of cheese as well, or substitute low fat biscuits.

Tip: It’s the breakfast that keeps on giving. Cut it into portions and freeze for later use or use a panini press to create the perfect complement to your favorite soup at lunch or dinner.

Blueberry Monkey Bread

This is wonderful  and  give credit to    home made simple


Blueberry Monkey Bread



INGREDIENTS 
1 cup white sugar
1 tablespoon ground cinnamon
4 cans (10 ounces each) refrigerated buttermilk biscuit dough
1 cup frozen or fresh blueberries
3/4 cup margarine

INSTRUCTIONS

  1. Preheat oven to 350˚. Thoroughly grease a bundt cake or round cake pan. If you don’t have one of those, a 9” x 5 1/2” bread pan will work.
  2. Mix sugar and cinnamon in a bowl. Cut biscuits into bite-sized pieces, then cover each piece in the sugar mixture.
  3. Arrange one layer of biscuit pieces in the bottom of the pan, then sprinkle about a quarter of the blueberries on top of it.
  4. Repeat adding layers of biscuit pieces and blueberries until you reach the top of the pan.
  5. In a saucepan, combine the rest of the sugar mixture with margarine. Heat until the sugar is dissolved and the margarine is melted. Pour over the biscuits in the pan.
  6. Bake for 65 minutes or until done. Lift and turn out onto a cake plate. Top with icing, if desired.

CAKE POPS are amazing!

I first tasted these two years ago at a Christmas party and immediately had to have the recipe. It’s based on a mix, but I imagine you can follow the same directions substituting from scratch cake and frosting (I’ll try that one day). You can also try it with other cake combinations.
Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)
I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It’s easier to work with when it’s hot.

Spiced Nuts

This is a wonderful treat for anytime but especially good  to package as gifts for the holidays.

1/4 cup water
1 cup sugar
1/4 tsp nutmeg
1/4 tsp ginger
1 tsp cinnamon
1 pound walnuts (well any nuts  really)

In large skillet put water, sugar and spices. Allow to boil and thicken. Put in walnuts and  coat them well.
Spread out on flat surface, separate and let them cool.  Store in tightly sealed container.

Dew Apple cobbler

This is a very rich wonderful dessert. great with vanilla ice cream also.

2 green apples peeled cored and sliced into eighths
Sprinkle apples with cinnamon
2 cans crescent rolls
1 cup butter
1 1/2 cup sugar
1 1/2 cup Mountain dew

Preheat over to 350 F. Wrap each apple slice in a segment of crescent roll dough.
Place wrapped apples in greased baking dish.
Melt butter and stir in sugar until dissolved. Spread over apples.
Pour Mountain dew over everything and do not stir. Bake for 45 minutes uncovered.


Treat yourself

Peanut butter fudge

1/4 cup butter
1/3 cup milk
1 tsp vanilla extract
1 (16 oz) package powdered sugar
1/2 cup cocoa
1/4 teaspoon salt
1/2 cup Peanut Butter (chunky if you like)

Melt butter in medium sauce pan, remove from heat. Add milk and vanilla.
Sift powdered sugar, cocoa, and salt together;  gradually add to milk mixture, stirring until blended.
Stir in peanut butter.
Press mixture into 8 inch square pan, chill.  Cut into squares.


Homemade Hot Pockets

These are fun because the kids can create their own if you prefer.  Or  you can make them to what each child prefers.

1  8 oz can Refrigerated Crescent Rolls
cooked meat  (chicken, beef, ham, pepperoni, etc)
shredded  cheese to your preference
pizza sauce  if  you like
mushrooms and onions are optional
we also like using cooked  broccoli  or  spinach

Preheat oven to 375 F.   Separate dough into 4 rectangles; firmly press perforations to seal.
On ungreased cookie sheet, press or roll each to for 7X5 rectangle.
place meat, sauce and cheese,  whatever fillings  you want on half of rectangle.
Fold dough over and press edges to seal.
Bake for 10-13 minutes

Oatmeal Scotchies

I absolutely loved when my granny made these.  I make them  now  and  they are good but nothing compares to the love  granny added.

               This is my mom, Judy,  and Grandma Rosy

Scotchies

1  1/4 cup all purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 c (2 sticks) butter softened
3/4 c sugar
3/4 c packed brown sugar
2 eggs
1 tsp vanilla extract
3 cups quick oats
1   11 oz package butterscotch morsels

Preheat oven to 375 F
Combine dry ingredients in bowl set aside.  Beat butter and both sugars together well. Add eggs, beat well.
Add vanilla and mix well, Gradually beat in flour mixture.  Stir in oats and morsels.  Drop by rounded spoonfuls on ungreased cookie sheets.  Bake 7-8 minutes.  cool on wire rack.




Hot Pizza Dip

OK, so,  this is supposed to be a dip  you share.  But  well,  I can make a meal of it.  LOVE  THIS!!!

1   8 oz package cream cream cheese softened
1 tsp Italian seasoning
3/4 tsp garlic powder
mix together well and spread in bottom of greased 9 inch pie pan

mix 2 cups shredded mozzarella cheese and 1 cup shredded cheddar cheese
place 1/2 cup over cream cheese.
Pour half cup pizza sauce over shredded  cheese.
Sprinkle remaining cheese over sauce. Bake at 350 for 20 minutes. serve with chips or bread sticks.


BURN FAT!

OK  this  recipe is  actually a 7 day diet. it does help kick start a diet.  I have done this and it does work.
If you like soup its a great way to lose weight.

Basic Fat burning soup
6 large green onions
4-5 carrots sliced
1-2 cans tomatoes
1 large head of cabbage
2 green peppers
1 bunch of celery
1 pkg lipton soup mix
season with salt, pepper, curry, parsley, or bouillon.  hot sauce  if  you prefer.

Cut veggies into small to medium sized  pieces and cover with water. Add soup mix and seasonings. Boil fast for 10 minutes. Simmer and continue cooking until veggies are tender. This soup can be eaten anytime you are hungry. Eat as much as you want , whenever you want. This soup will not add calories. The more you eat the more you will lose.

Diet plan

Day 1:
Eat all fruits (except bananas unless otherwise stated). Cantaloupe and watermelon are lower in calories. Eat only the soup and fruits. For drinks have unsweetened  tea, cranberry juice or water.

Day 2:  All vegetables today. Eat until you are stuffed with all fresh, raw, or canned vegetables. Try to eat green leafy veggies stay away from dry beans, peas and corn. Eat along with the soup. At dinner time on this day, reward yourself with a  big baked potato and butter. NO fruits this day.

Day 3: Eat all soup, fruit and veggies you want. DO NOT have potato. If you have eaten, as above, and have not cheated, you will have lost 5-7 pounds.  Don't give up go on to day 4.


Day 4: Bananas and skim milk. Eat as many as 3 bananas and drink as many glasses of water as you can on this day along with soup. Bananas are high in calories and carbohydrates and so is the milk, but this particular day your body will need potassium and the carbohydrates, proteins and calcium to lessen your cravings for sweets.

Day 5:  Beef and tomatoes. You can have 10-20 ounces of beef and a can of tomatoes or as many as 6 fresh tomatoes today. Try to drink 6-8 glasses of water to wash away uric acid in your body. Eat the soup at least once this day.

Day 6: Beef and veggies. Eat to your hearts content of beef and veggies today. You can even have 2 or 3 steaks if you like with green leafy veggies, NO potato. Be sure and eat the soup at least once today.

Day 7: Brown rice, unsweetened fruit juice, and veggies.  stuff yourself!  Be sure you eat the soup at least once today!

by the end of first week, if you have not cheated, you will have lost 10-17 pounds. If you have lost more than 17 pounds stay off the diet for 2 days before resuming.

This 7 day eating plan can be used as often as you like. As a matter of fact, if followed correctly it will clean you system of impurities and make you feel better over all.

Definite NO NO's:  Bread, alcohol,  fried foods, and carbonated drinks.

Definite DO's: water and lots of it.  Eat the soup anytime you feel hungry.

this diet is from Sacred Heart Memorial Hosp. Used for over weight patients to lose weight rapidly, usually before surgery.






Cookies the easy way

1/2 cup milk
2 cups Sugar
2 tbsp butter
Boil all in pan 1 1/2 minutes
add 1/3 cup cocoa.
Return to boil add
1/2 cup peanut butter and 1 tsp vanilla extract.
return to a boil stirring constantly.
Stir in 3 cups quick oats.
Spoon  onto wax paper allow to cool.  store in sealed container.


Country Breakfast Pie

1 Roll Sausage cooked, crumbled, drained
9 inch pie shell
1 & 1/2 cup grated swiss cheese
1/4 cup chopped bell pepper
1/2 cup Red bell pepper
3 tbsp chopped onion
4 eggs lightly beaten
1 cup light cream

Prepare pie shell.  Mix cheese and sausage, sprinkle in shell. Lightly beat eggs in bowl. Combine remaining ingredients and add to egg mix.  Pour in shell. Bake 375 F for 40- 45 minutes. Cool on rack 10 minutes. 6-8 servings.

Chicken Quesadillas Cheesy!

1 pound skinless, boneless, chicken cut in strips
1 can condensed cheddar cheese soup
1/2 cup thick and chunky salsa
1 green pepper cleaned and sliced.
1 small  onion sliced
10  8 inch flour tortillas

Preheat oven to 424 F
In  nonstick skillet cook chicken, peppers, and onions  until done and juices evaporate,  stir often. and soup and salsa heat thoroughly.
Divide mix between tortillas. fold in half.  bake 5 minutes or until hot.
We like to dip them in ranch dressing.




Just a bit of Honey

Candy has something good about it at least.  super easy  even kids can do it!

1 cup Honey
1 cup peanut butter
2 cups powdered dry milk

Soften peanut butter and honey slightly in microwave.  Mix milk in and knead well. Roll onto wax paper. let cool cut into strips.  wrap in wax paper store in tightly sealed container.

Home~made Crackers
Have fun and try new flavors too

1 Cup all purpose Flour
1 teaspoon baking powder
1/4 teaspoon season salt
1/8 teaspoon *pepper
5 tablespoons butter
1/4 cup half &half cream

Stir together all dry ingredients. Using 2 knives or a pastry blender, cut in butter until crumbly. Stir in all the half and half.  On lightly floured surface, knead dough gently for 10-12 strokes.  Roll out to 1/4 inch thick. Cut with floured cookie cutters. Bake about 10 minutes at 400 degree F. Split crackers open. With cut sides up, bake an additional 5-7 minutes  until golden brown.

*  you can substitute poultry seasoning, chili powder, garlic powder, powdered cheese, or any other seasoning you prefer  instead of the pepper.

hot buns!


Bread machine Method  for Jiffy Cake Mix rolls    (2  NON BREAD machine  recipe  at  bottom of  page)
These are a slightly sweet dinner roll
Jiffy Rolls
1 9 (oz) box jiffy cake mix yellow, or white
1 pkg. or 2 and 1/4 teas. yeast
1/2 teas. salt
1 1/4 cups warm water
3 c. flour all purpose is ok but I always use bread flour
In bread machine pan put water, then salt, the cake mix and flour top with the yeast and put it on the dough cycle. When cycle is complete remove from bread machine, I don't flour my rolling board I oil it so do what you prefer and cut and then roll into 15 to 20 rolls, put on a greased baking sheet cover and let rise till double about an hour. Bake at 400 10 to 15 minutes.
You can also do this w/o a bread machine I am just lazy.

OR   WITHOUT BREAD  MACHINE
  • This  came  directly from the Jiffymix.com web site
  • 1 pkg. "JIFFY" White Cake Mix (or 9 oz of any cake mix)
  • 1 pkg. dry yeast
  • 1/2 tsp. salt
  • 1-1/4 cups warm water
  • 2-1/2 to 3 cups flour
  • margarine or butter
  • Preheat oven to 400°.  Grease a baking sheet.
    Combine cake mix and yeast. Add salt and warm water. Gradually beat in flour. Cover and let rise in a warm place for 1 hour. Punch down dough and shape into dinner or clover leaf rolls. Place on prepared baking sheet and brush with margarine or butter. Cover and let rise 1 hour or until double in size. Bake18-20 minutes.

Cake Mix Yeast Rolls
2 packages granulated yeast
2 cups warm water
1 box white Jiffy cake mix
1 teaspoon salt
4 cups or more all-purpose flour
Mix yeast and water. Leave set long enough for yeast to dissolve.
Add remaining ingredients. Mix. Let rise to double.
Punch dough down. Make rolls. Let rise to double again.
Bake at 325 degrees F for 20 minutes. Butter tops when removed from oven.

I  still love all the goodness of the bad for us fried foods. here is one of my favorites.

Country fried Streaks

2-4 cubed steaks sprinkled with season salt and light pepper
In flat pan  mix 1 cup flour (any kind)
with  2 tablespoons of Ms Dash garlic and herb seasoning
in seperate bowl  mix  1 cup milk with 2 eggs
pour 1/2-3/4 cup oil in large skillet over medium  heat.

coat both sides of cubed steaks in flour
Dip in milk and egg mix
then coat in flour once more
Place in Hot oil. cook  until golden brown on both sides.

We  serve these with mashed potatoes and white gravy over them.
But they are  also good with cheese on a sandwich.

Monkey Bread

2 cans (8biscuits each) small biscuits 
combine 1 & 1/2 cups sugar  with 3/4- 1 cup cinnamon
spray a bunt pan and set aside.
in small sauce pan place 1-2 sticks up butter (depends on how gooey you like your bread)  set on low  heat to begin melting.
cut each biscuit into 4ths  and coat with cinnamon sugar mix then place in bunt pan evenly as possible.
with remaining cinnamon and sugar mix  stir into melted  butter  and  pour over biscuits.
Bake at 350 F  for about an hour.  will spring back when touched.
Invert onto place and drizzle with white icing (optional)

DIG IN

This  recipe is good for  a group.  It is also good  to  make  ahead and  freeze  for quick  meals/ snacks.

2 pounds ground beef cooked and crumbled
1 medium onion
2-4 cans Red Kidney beans
1-2 cans black beans
1-2 cans chick peas
1-2 cans mexicorn 
1-2 cans diced tomatoes
1-2 cans water
2 packets of taco seasoning
2 packets dry ranch mix
 dump all contents  in a large pot  (do not drain any cans dump all  in pot)  
simmer  until beans are tender.  
serve hot  with shredded  cheese and  sour cream.
I use frito scoops  or tostido  chips

I freeze  extra in single serving containers for quick snack  or meal.

Breakfast of champions

These are yummy and easy to eat on the go.  They last up to a week in the refrigerator. This recipe is easily adjusted for large or small batches.

Breakfast wedges

1 bag thawed and mashed tater tots
1 small onion diced  (optional)
1 small green pepper diced (optional)
Bacon or sausage cooked and crumbled (optional)
garlic powder to taste
salt to taste
MIX all above ingredients well
8-12 eggs  add at least 8 eggs and mix well.  will need to be a little soupy then add
1-8 oz bag shredded cheese (I use taco blend)
should no longer be  soupy.

Drop by spoonfuls on hot oiled skillet.  Cook on both sides until golden brown and center is done.  we like them with ranch dressing.  also yummy on a biscuit with a slice of cheese.

Friendship ties that bind.

This recipe is intended to share.  So many of us never take a moment to sit with a friend or just drop off a small gift of love from  the  heart.  We all know how important it is to show kindness.  This is great way to start. Neighbors, Postal carries, trash men, friends you haven't seen in a while, co-workers, or just because you feel like sharing,  a nice little smile when you hand over some home made love will brighten anyone's day.
So  here's  what to do.  have fun and let me know what you think.


In a large bowl mix 1 cup flour, 1 cup sugar, and  1 cup milk cover and let sit on counter away from heat.
The next day mix  1 cup flour, 1 cup sugar, and 1 cup milk. Mix well cover and let sit.
For the next 4-6 days do the same as before. On the day you are ready to bake. Mix  one cup of each again and set aside.   Preheat oven to 325 degrees. 
In small bowl mix one cup sugar  with ¼- ½ cup cinnamon.  Spray 2 bread pans with cooking spray then sprinkle generously with cinnamon and sugar mix.
In separate large bowl mix the following ingredients
 2 cups of the mixture that you have been adding to everyday,  1 cup oil, 1 tsp vanilla, ½ tsp salt, 1 cup sugar, 3 large eggs, 2 cups flour, ½ cup milk, ½ tsp baking soda, 1 tsp cinnamon, 1 large box of instant pudding (flavor depends on what type of bread you will make).

Ok Here is the important part. 
For butterscotch bread  simply use instant butterscotch pudding  (you can add almond slivers if you like)
For Cinnamon bread  use instant French Vanilla pudding  and add  ½ cup of cinnamon
For  Banana bread  use instant banana pudding, diced nuts,  and  2-3 mashed bananas.   (sprinkle top of bread with nuts before baking.
For any berry  bread use instant french vanilla pudding and minced  frozen berrys.
For tropical bread use instant french vanilla pudding and tropical trail mix minced.
For chocolate peanut butter bread  use instant chocolate pudding  add peanut butter chips.
For zucchinni bread  add 2 shredded  large zucchinni  and instant vanilla pudding.


Divide mixture between bread pans and bake for about an hour. Will spring back when touched in center top.
Cool on wire racks. Wrap with plastic wrap snuggly.
Share with friends. Your friends will enjoy!  
Recipe is easily doubled or tripled.   
Can serve cold or warm, with or without butter. Also tastey  with cream cheese.
